doTerra Gala

doTerra is a company that is dedicated to natural health and provides products made from some of the finest natural resources accessible to man. When doTerra returned to the Salt Palace Convention Center to host their convention, Utah Food Services was challenged with infusing their natural oils into the meals being served. On Thursday September 10th, our chefs did just that… For 5,500 People! That’s over 2378 (4 oz.) Beef Tenderloin (Accounting for Special Meals), and more than 75 Gallons of Salad dressing!

The menu started with a salad made up of Green and Red Heirloom Spinach, Romaine, enoki mushrooms, dried cherries, yellow carrots and a choice of dressing: DoTerra Lavender infused Vinaigrette, or, Peppercorn Ranch.

The Entrée was a Gluten free option, which consisted of a 4 oz. beef tenderloin with a truffle and doTerra thyme oil demi-glace, Two Large Black Tiger Shrimp with a doTerra lemon sauce, on top of a bed of baby carrots in a doTerra ginger orange glaze, and a side of oven roasted potatoes with a hint of doTerra rosemary oil.

Finally, Dessert options included: a doTerra Peppermint Grasshopper Torte with Mint Mousse, a Single Raspberry, and Mint Chips, or, a Crème Brulee cheesecake with a mixed berry topping, doTerra Citrus oil and Raspberry Fruit Coulis.
