Thunderbirds Airshow

The 2016 thunderbirds airshow reception at the Hill Aerospace Museum for 400 guests features five buffet stations and required us to use our UFS mobile catering kitchen number 2. These full service mobile kitchens allow us to serve large numbers of hungry guests delicious hot food at just about any location.  Mobile catering kitchens make on-site production of hot and cold food possible, and as a result, significantly shorten the distance from hot stove to your plate.


Outlined below is an overview of the menu served from our mobile catering chefs:

Nibbles and Bites Station

Hot items:

  • Fiery chicken wings with bleu cheese dip
  • Bison meatballs simmered in a chocolate demi-glace

Cold items:

  • Mini crabmeat salad croissants with butter leaf lettuce and lemon aioli
  • Classic tuscan bruschetta
  • Jamaican jerked chicken and black bean tortilla bites with habanero sauce


Retro Station

Hot items:

  • Creamy macaroni and gourmet cheese with classic bread crumb topping
  • Mini nacho grande boats topped with chorizo sausage queso
  • Chili con carne
  • Shepards pie and gravy

Cold items:

  • Jalepenos
  • Chips
  • Shredded cheese
  • Tortilla strips
  • Chopped scallions
  • bottled hot sauces

Quesadilla Action Station

Options include (made to order):

  • Flour tortillas
  • Shredded cheese
  • Chopped tomatoes
  • Chopped onion
  • Chopped cilantro
  • Adobo chicken
  • Grilled shrimp


  • Pico de gallo
  • Guacamole
  • Caper sour cream
  • Bottled hot sauces

Wok of Fire Station

Warm items:

  • Herbed bread sticks
  • Rosemary focaccia bread

Wok tossed items:

  • Shrimp and scallop pasta seasoned with garlic, white wine and herbs

Dessert Station

Hot items:

  • Apple pie bake with a side of whipped cream

Cold items:

  • Assorted gourmet cookies
  • Strawberry shortcake parfaits
  • Brie and fig skewers
  • assorted bon bons
  • assorted petite fors
