Catering for a Friend

One of the rare joys of working in the catering business is actually attending an event catered by Utah Food Services.  I had the pleasure of developing a menu for one of my best buddy’s 50th birthday party.  So naturally, because I was catering for a friend, everything had to go exactly as planned!  First the backdrop, a private home owner’s lodge in Park City at the base of the mountains, the perfect place for an intimate indoor/outdoor reception. Next, the menu starting with the signature cocktail: Dark and Stormy; delicious but hopefully not indicative of the next decade!

The guests started with charcuterie platters and hand passed Bourbon barbecue pulled pork atop a cornbread crisp finished with sweet corn relish, Chesapeake Bay crab cakes, and ceviche poke garnished with seaweed salad.

The salads screamed summer with native greens, strawberries, feta cheese, roasted pine nuts, cucumbers and green onion served with balsamic vinaigrette. I loved Chef Cameron’s spin on our beet salad with the addition of grilled corn and just enough spice.

Chef Scooter manned the action station as he pan-seared prawns with fresh garlic, shallots, capers, tomatoes, herbs tossed in a lemon-white wine sauce served over baby shell pasta.  All surf must have turf, so the meat lovers feasted on flame seared, ginger marinated tri tip, served with a peppercorn tarragon aioli accompanied by garlic and shallot mashed potatoes and green tipped baby carrots.

The irresistible finale, a ribbon wrapped Tiramisu Cake, complete with sparklers on top received the highest marks and disappeared as quickly as the birthday boy’s youth.  Welcome to the golden age, always a reason to celebrate!
