Meet the Team: Floral and Decor

Our catering division also offers a full service Floral Decor department. Our staff has many years of experience in custom designing and decorating for all kinds of events.

Nicole (Nikki) Spencer joined the Utah Food Services Catering Team as a Server almost 5 years ago, and has since added the titles Assistant Floral/Decor Manager and Floral/Decor Manager to her resume. Nikki is now the commander-in-chief of the Floral and Decor department, and we decided to take a deeper look into the inspiration and spotlight what it is exactly that she does.

Why did you get into Decor?

I was always the kid that was playing in the dirt and trying to hatch the eggs I stole out of the refrigerator. When I was a kid, I used to lay in a field of wildflowers, it was definitely my happy place. Someone told me that the queen bees don’t sting, I learned firsthand that wasn’t true. My nickname growing up was love bug and I have an appreciation for life and art. I chose decor because it resonates with me, reminds me of where I came from and makes me happy.

How would you describe your decor style?

I like to pull from all walks of inspiration. I don’t like to limit myself to one style, arrangement or technique. I like to pull from all the styles that are available to make things that are unique. I would get so bored if I only had to do one style forever.

The favorite event you did for Utah Food Services?

My favorite event that I’ve done for Utah Food Services is the Elstein Party. Because its neat to talk about someone’s idea and bring it to life. It was unique and the end result was more than I ever anticipated and it was absolutely beautiful. Our team played such a big role in making someone else day unforgettable, that was a really good feeling. We went to our local green waste to find our birch branches. We were in the mud and digging through piles because I couldn’t find them online or in any store. We spent a lot of time on this event and it ended up being really satisfying.

Whats your favorite part about working in decor?

My team is my favorite part. We all have our specialties and play a small part in making something big. When we come together, its whole. We are definitely more of a little family.

Which of your creative accomplishments gave you the most satisfaction, and why?

One of the first weddings that I ever did. It was a lot to take on and I was very nervous. There were a couple of dilemmas and it gave me a lot of appreciation for what it takes to put on an event. There is a lot of planning that goes into one specific day, but the bride started crying when she saw her flowers and I was touched. I knew at that moment that they weren’t just flowers and it wasn’t just another “event” but something that this woman had envisioned for a big part of her life. I was able to help her make her vision a reality and it was incredibly satisfying.

What advice would you give to someone planning an event?
Attention to detail is key. It will make for a very successful event. Attention to detail is being able to plan and execute everything so it is exactly in the right spot. That half-inch makes a difference. Being able to balance an environment makes a big difference with how something presents itself. Style and production have everything to do with what an event ends up looking like. You need to read your customer and clients characteristics to know what type of style they like best and then be able to communicate that effectively.
